< PreviousFRIED BOLOGNA SANDWICH Makes: 4 sandwiches 16 slices bologna (don’t get fancy, any supermarket brand will do.) ½ cup mayonnaise 3 tablespoon Creole mustard 4 tablespoons butter, softened 8 slices Texas Toast 4 slices cheese (American is traditional, but any good melting cheese will do.) 2 cups shredded iceberg lettuce 4 thick tomato slices 16 bread-and-butter pickles 2 cups thin-cut potato chips (optional) Preheat oven to 250 F. Line a sheet pan with foil. Stack the bologna slices and cut notches around the edges at regular intervals. Stir together the mayonnaise and mustard in a small bowl. Refrigerate until ready to use. Spread butter evenly over one side of each bread slice. Heat a large skillet or griddle over medium heat. Arrange bread in pan butter-side down. Cook until toasted on the bottom. Flip bread over and toast unbut- tered side until lightly browned. Remove to a cooling rack. Increase heat to medium-high. Arrange the 4 bologna slices in pan: cook until lightly charred around the edges on each side. Arrange the bolo- gna in a single layer on the prepared pan and place in the oven. When all the bologna is cooked, top each stack with one slice of cheese. Place pan in oven until cheese melts, about 2 to 3 minutes. Spread mayonnaise mixture over the unbuttered side of the toast. Place four toast slices, mayonnaise-side up, on a work surface. Top each with ½ cup lettuce, 1 tomato slice, 4 pickles. Add on bologna stack, top with potato chips and second slice of toast. Back in the day, Texans likely served fried bologna on Rain- bo or Mrs. Baird’s white sandwich bread, with mayonnaise or mustard and, perhaps, a slice of American cheese. This updated version of the classic comfort food comes with toasted bread, Creole mustard, bread-and-butter pick- les, along with the optional choice of Lay’s Potato Chips. Imagine my delight when I ran across a recipe with all these ingredients in one dessert. This version is by Christopher Kimball, found- er of food media company Milk Street. Kimball modified a recipe from “Honey & Co.: The Cookbook.” Kimball substituted hard-to-find ingredients with more easily sourced ones. This definitely isn’t a fluffy cake with sugary sweet icing. It does, however, have layers of flavor, is easy to make and features a tasty base and top- pings. It works both as a dessert or a breakfast/brunch cake. The only decisions you’ll have to make are whether to substitute another fruit for the cherries (don’t) or serve it à la mode (do). CHERRY PISTACHIO ALMOND COCONUT CAKE 10 tablespoons salted butter, melted 1 cup almond flour ½ cup shredded unsweetened coconut 1 teaspoon baking powder ½ teaspoon salt 3 large eggs, room temperature ½ cup and 1 tablespoon sugar 1 ⁄ 3 cup brown sugar ½ teaspoon almond extract 1½ cups pitted fresh cherries or frozen cherries, thawed and patted dry 1 ⁄ 3 cup unsalted chopped pistachios Powdered sugar for garnish (optional) Preheat oven to 350 F with rack in center position. butter a 9-inch round cake pan, line the bottom with a round of kitchen parchment, then butter the parchment. Whisk flour, coconut, baking powder and salt together, set aside. Whisk eggs, sugars and extract. Add cooled melted butter. Add dry ingredients. Pour batter into pan. Cut cherries in half and drop over top of batter. Sprinkle with tablespoon of sugar and sprinkle with chopped pistachios. bake until toothpick comes out clean, 50- 55 minutes. In the 1920s, a police officer chased a suspect through The Strand, leading to a scuffle between the two and eventually fatal shots to both. The police officer’s presence has been felt by visitors and some have even seen the ghost, according to reports. Today, a new presence is making waves at Shark Shack — bartender Makaila Schlekewy. Each month, Coast Monthly chats with mixers and shakers on the local bar scene. About two years, I worked at Landry’s and Longboard before coming here last year. Do you have any specialized training? Most of what I’ve learned has been on the job. I also worked as a barista, which helped, I think. Are you from the area? I actually moved here from Little Elm near Frisco about four years ago. I am attending Galveston Col- lege, studying business and love being near the beach. Do you know about the ghost? Yeah, I’ve heard he’s a policeman. I’ve never seen him, but we do see a lot of customers from the ghost tours. What do you like most about working here? It’s awesome, I love it. This is a great business and it’s even more fun during events. Does it ever get crazy in here? We close at 10 p.m., so it doesn’t get too bad here, but it does get busy a lot, which I don’t mind. SEXY MEXICAN 1 ounce tequila 1 ounce triple sec 2 ounces sour mix 1 ounce amaretto Garnishes: Tajín and lime rub the rim of a cocktail glass with a lime slice and dip in Tajín seasoning. In a cocktail shaker, combine tequila, triple sec and sour mix with a couple of ice cubes. Shake for about 10 seconds until chilled. Strain into prepared cocktail glass with fresh ice. Slowly pour amaretto over the top. This year’s theme was Apples for educators, honoring those who participate in educating the children in the county. Guests enjoyed an afternoon filled with fashion, fun and delicious food. The style show showcased the latest trends from local boutiques, including Jill’s Fashions and bridals, Queen’s Attic, Honey bees and Tangerines. School district employees from across Galveston County participated as runway models, and the Galveston Island Humane Society provided adoption-ready dogs to escort the models down the runway.
