COASTMONTHLY.COM/ COOKBOOK106 COASTMONTHLY.COM | OCTOber 2023 BIRD’S EYE VIEW LEAST BITTERN story and illustration by CHRISTINA EBERT MATTISON “Never use big words when a diminutive one will suffice,” quipped the late American journalist William Safire. When our eyes scan the wetlands, hoping to spot towering great blue herons (the “big words,” as it were), we may overlook their small yet mighty cousins, the least bitterns. Like its lankier family members, the least bittern is a formidable hunter, patiently scanning the water for fish and impaling prey with incredible speed. We might miss spotting the least bittern because it prefers to forage among the reeds, perching itself above the water’s surface. Look for this species in deeper waters as well — because they don’t wade like many other marsh birds, they can perch wherever there is vegetation. FUN FACT: When startled, a least bittern will camouflage itself by pointing its bill straight up and swaying along with marsh plant life.
